EP (European Preparation)

The coffee is European Prep which indicates the coffee has undergone rigorous sorting – usually by hand, though increasingly via optical sorters. Prep or Preparation refers to the dry-milling steps of preparing coffee for export: hulling, grading, classifying, sorting

The terms are used in central and south America.  Supposedly it originated because certain European buyers required the extra sorting, and this then became a standard and a selling point.
